Oyster with Flake
A proper old-school oyster wafer
The Oyster with Flake is a proper old-school serve. Instead of a cone, the soft serve sits in an oyster wafer: a shell-shaped wafer that opens like a clam and holds the swirl inside. A Flake goes in on the left. You eat it from the side rather than the top, and the light wafer gives a little crunch with each bite.
Older guests often light up when they see it, because oysters were a fixture of ice cream vans and seaside kiosks for generations and are less common now. That makes it a lovely nostalgic touch at anniversaries, garden parties and community events with lots of grandparents in the queue. Younger guests tend to find it a novelty, so it often starts a conversation at the hatch.
