Ice lolly
Definition
An ice lolly is a frozen treat on a stick, made from flavoured water, juice or ice cream. Wrapped lollies are the fastest thing a van can serve.
Ice lollies are frozen on a stick in a mould. Water ices are made from flavoured water or juice, while ice cream lollies have a dairy centre or coating, and some combine both. Most are bought in wrapped and kept in the van's freezer until the moment they are handed over.
For large crowds, lollies are the key to short queues. There is nothing to build, so each sale takes seconds, and they keep their shape longer in the sun than a cone does.
